what i ate in a day ~ It’s cold and flu season and I caught a small cold. So, everything I ate is focused on trying to get better. My first meal of the day was congee which is one of the top foods to eat when you’re not feeling well. I added rice to bone broth and seasoned with salt and fish sauce. Then I added crushed garlic and ginger as aromatics. I also made a honey, ginger and lemon tea to clear my sinuses. Next I made homemade bone broth with lots of chicken bones — this is soo good for you whether you’re sick or not. I turned it into a thai coconut chicken soup, called tom kha gai. Reduce the heat to medium-low and allow to cook for about 5 minutes or until the beef has browned but is still moist. • Add bouillon cubes, ground cumin, black pepper and urucum (or paprika) to the pot and stir, cooking for another 5 minutes or so, until most of the liquid from the beef and vegetables has evaporated. Add the tomato paste and stir to combine. • Add 6 cups (1 ½ liters) of water and stir, removing any bits that may have stuck to the bottom of the pan with a spoon. • Once the soup comes to a boil, lower the heat back to medium-low and break the eggs into the pot, slowly stirring with a spoon so they cook as stringy pieces. Ideally, you’ll have one cooked yolk per person, which is why we indicate a range of eggs in the ingredients list. • In a bowl, mix the cassava flour with the remaining 2 cups (500 ml) of water, and with a spoon, slowly add the flour and water mix to the pot, stirring with each spoonful, so it does not clump. Keep stirring for another 5 minutes or until the flour has fully cooked. If you do get clumps, press them against the edge of the pot to disintegrate them. It’s okay if you’re left with some smaller balls of flour at the end, focus on breaking up the bigger ones. • Turn off the heat and add the lime juice and chopped cilantro. Taste and adjust seasoning and salt. Stir and serve hot in bowls, topped with chopped scallions, or more cilantro, or add a spoonful of dried or roasted cassava flour or farofa for some crunch.

To each their own I guess!) Juice from 1/2 or a full lemon (I LOVE lemon so I like to add a lot but you may want it a bit less tangy) First mix together the vital wheat gluten and water, this will form a dough quickly. Knead it a few times and then roll it into a thin tube shape and use scissors (so much easier than using a knife) to cut the dough into small pieces, like really small pieces (half an inch?) as the dough expands in the soup. It will be sticky which can be annoying but just cut them into little half inch pieces and place them onto a cutting board or plate. In a saucepan on medium heat saute the onions in oil till translucent, then add the celery, carrot, and garlic and cook for about five more minutes. Add the stock, "chicken" pieces (I usually pick up the little pieces and place them in quickly one by one because they are sticky; you can't really just scrape them off a cutting board with a knife), spices (including salt and pepper) and the rice. Bring to a boil and then reduce the heat and cover with a lid to simmer for 15 - 20 minutes until the rice is cooked. In the medical world, honey is known for its antimicrobial effects. So much so, it was even used in ancient Egyptian medicine to treat wounds. 5. Tea Out of all the different food and drink choices to combat sickness, perhaps none are more famous than tea. Just the look of a steaming cup is enough to cure your cough. 6. Garlic If it can kill a vampire, it can help cure your cold. Similar to honey, garlic has also been used in medicine for centuries. 7. Coconut Water Tea is not the only good liquid to drink when you're sick. Coconut water will also keep you hydrated. 8. Oatmeal Who doesn't appreciate a good bowl of oatmeal? If you're feeling sick, this is the best time to eat one. First of all, oatmeal is really easy to fix up. 9. Chicken Soup Along with tea, chicken soup is like the Holy Grail of foods to eat while you're sick. Not only does it have terrific effects, it's also really comforting. Leave that to gently simmer whilst you slice up half of the banana. Take the other half of the banana and mash it until smooth in a bowl, then add that to the pan along with the oats and maple syrup. Keep stirring it well to make sure it doesnt stick to the pan and let it warm through for around 10 minutes. Serve whilst hot, top it with the other half of the sliced banana, drizzle over some almond butter and add on some flaked almonds - or you could top it with anything you like! CARROT, RED PEPPER & GINGER SOUP (Serves 2): 1 tsp olive oil 1 white onion 3 cloves garlic 1 tbsp fresh grated ginger 4 carrots, peeled 2 sweet red peppers 1 tbsp tomato paste 1 1/2 pints vegetable stock: 🤍 Black pepper Rye bread: 🤍 First roughly dice the onion and add that to a pan with the olive oil on a medium heat. Cook the onions down until soft and then mince in the garlic, fry that off too. Chop up the peeled carrots, then add those to the pan. Cook those off as well before then chopping up the red peppers and add those to the pan along with the tomato paste. Stir everything together well and let that cook for a few minutes before then adding in the vegetable stock and season it with black pepper. Bring it up to a gentle boil then turn down the heat and place the lid on, leaving it to simmer for 20 minutes. After 20 minutes, transfer it over to a food processor and blend until smooth. Place it back in the pan to heat it through again before serving. Serve with pumpkin seeds and toast. BAKED BEANS ON AVOCADO TOAST (Serves 2) 2 large tomatoes (or tin chopped tomatoes) 1 tsp olive oil 1 tbsp tomato paste 2 cloves garlic 1/2 cup water 1 can cannelloni beans Salt & black pepper 1 avocado Rye bread: Rye bread: 🤍 Vegan Worcester sauce: 🤍 To make the baked beans, first chop up the tomatoes, then in a pan add in the olive oil, the tomato paste and mince in the garlic. Fry that off for a few minutes before adding in the chopped tomatoes, stir it well, season with salt and pepper then add in the boiling water and the rinsed, drained cannelloni beans. Let that simmer away on a gentle heat for 20 minutes. Just before it's ready, toast some bread and then mash up half an avocado in its shell, spread that onto the toast then add the beans on top and season with black pepper and vegan Worcester sauce. BROCCOLI & CHEESE JACKET POTATO (Serves 2): 1 large potato 1/2 small head broccoli Cheese Sauce: 🤍 Parsley or vegan cheese to finish For this first preheat the oven to 180 degrees celsius, then wash and prick the potato and place that in the oven for 45 mins. In the meantime, cut up the broccoli into florets and steam until soft. Once done, heat up a batch of cheese sauce in the same pan. Once that's warmed through, add in the broccoli and stir it well. Remove the potato from the oven, slice it open and then fill it with the cheesy broccoli mixture. Finish with fresh parsley, vegan cheese or black pepper. HEALING TURMERIC MILK (Serves 1): 1 cup almond milk: 🤍 1 tsp maple syrup: 🤍 1/2 tsp turmeric 1/4 tsp cinnamon 1/4 tsp ground ginger Grating nutmeg Pinch black pepper Cinnamon stick (optional) First heat up the almond milk in a pan on a low heat stirring it so it doesnt stick. Next add in the maple syrup, turmeric, cinnamon, ginger, nutmeg and black pepper, give it another good stir, you might want to use a whisk to mix it together well and then pour that into a cup.
