Spicy Sambal is a tomato and chili sauce or paste, popular condiment or appetizer among the Filipino-Tausug people, mostly serve with cucumber at any special occasions, typically made from a mixture of a variety of chili peppers with secondary ingredients such as shrimp paste, garlic, ginger, shallot, scallion and sugar. It originated from the culinary traditions of Indonesia, and is also an integral part of the cuisines of Malaysia, Sri Lanka, Brunei and Singapore and southern Philippines specially the Tausugs. This is Jang’s version of the Tausug Spicy Sambal. It can be added as a main ingredient of any vegetable, fish, rice (fried rice), chicken and beef, or could just be eaten straight with white steamed rice. Enjoy the recipe! Ingredients and procedure: On a sauce pan, add all ingredients, 1 medium size chopped Onion 6 pieces’ medium size chopped Tomatoes 4 cloves of Garlic 10-15 pieces of Red chilies or any available chilies 2 tbsp. cooking Oil Turn on the fire and cook on medium fire until all ingredients are soft. After softening the ingredients, put it all in a food processor or blender, or you could use mortar and pestle to turn the ingredients into paste. Prepare to heat a frying pan on medium low flame, add 2 Tbsp. cooking Oil. Pour in all the blended ingredients and continuously stirring to avoid the ingredients sticking to the pan or burning until the paste partly dried. Turn off the fire and let it rest for 15 minutes and transfer into a sealed container and store it in the fridge minimum 5 days. There are few things more central to a Singaporean table than sambal. Sambal is a loose term used to refer to a chilli-based condiment in countries such as Singapore, Malaysia and Indonesia. In a spice-obsessed country such as Singapore, each hawker dish is paired with its sambal. Each sambal has its own unique blend of ingredients, but most have garlic, shallots and chillies as its backbone. For acidity, some employ the use of calamansi juice, others the sharp tang of vinegar. Sambal tumis is a chilli paste that is fried in oil, and is an entirely different animal to the chilli condiments that are eaten raw. It is a thick jammy paste, its colour a deep red to reddish brown. Its bold, rich roasted flavour comes from the slow-caramelization of chilli and onions. It is to Singaporeans what nam prik pao (chilli jam) is to Thais, and its uses in the Singaporean household are manifold. Fold through some deep-fried ikan bilis and it becomes a fitting accompaniment for nasi lemak. Hard boil some eggs, deep-fry them then roll them in the sambal. But my favourite way to eat sambal tumis is undoubtedly with seafood. Growing up, my mother’s hack for putting food on the table quickly was this. She would smear a piece of fish with sambal tumis, roasted it in banana leaves. It is her riff on the iconic hawker dish sambal stingray. There isn’t any stingray where i live, but a flatfish such as flounder works beautifully as a substitute. And once you have sambal tumis in your fridge, it is a snap to make. Sear the fish in an oiled pan until almost cooked. Smear the sambal on both sides before wrapping in banana leaves. Place the banana leaf package on the pan over low heat until the fish is cooked. Flip at least once so that both sides cook evenly. Unwrap the package at the table, scatter on thinly sliced red onions and squeeze lime juice over. If you want to make this truly sublime, serve with a dip made with with cincalok, lime juice and sliced red chillies. Pure heaven! Sambal tumis: Makes 2 medium sized jars 30g dried chillies 15g belacan 400g peeled red onions 50g cut fresh chillies 25g peeled garlic 40g white part of lemongrass, sliced 40g raw cashews or candlenuts 200g oil – if you skimp on the oil, you will get a dry and paste-like sambal 2 tbsp seedless tamarind pulp 50g gula melaka (or coconut sugar) Salt to taste Cut dried chillies in half and shake in a colander to remove seeds. Transfer to a boil and cover with boiling water. Allow to soak until completely soft. Meanwhile, crumble the belacan into a dry pan, and toast gently till aromatic. Blend belacan, shallots, chillies, garlic, lemongrass, candlenuts and dried chillies (squeeze to remove excess water) until a smooth paste forms. Heat oil in a wok, pot or saucepan. Add the rempah and fry gently on low heat, stirring to fully combine. Continue cooking gently, stirring occasionally, until the paste starts to ooze oil. Add the tamarind pulp and cook further, for about 30 minutes, until the paste darkens considerably. Add gula melaka and continue cooking until the sugar completely melts. If, by this point, the paste has darkened in colour but has not split yet, add another generous ladle of oil and continue cooking on low heat. When finish fry all of the ingredients then we prepare the muddler and we put all of the ingredients in the muddler and we muddle all ingredients until it really melt and add little chicken powder to give taste to the sambal, and ready to serve. If you guys make your own sambal you can adjust the chilly so that you can have spicy flavor in your level , the key in this sambal is in the shrimp paste if you use original Indonesian shrimp paste you can make same flavor guys. Sambal is the chili paste widely popular in Malaysia. We put sambal on top of nasi lemak, mee goreng, prawn mee, and stir dry a variety of spicy dishes. Sambal is for everyone; therefore, I want to share the sambal recipe with you and make a bet that you will hook on it after the first bite. You need a few specialty ingredients, but fortunately, they are available online and in most Asian grocery stores. Recipe: (Please refer to the blog post to download the recipe and access the full detail: 🤍 ) 1 medium-size onion (about 200g) 5 cloves garlic 100ml (about 1/2 cup) vegetable oil 25g (1 oz) dried chilies 150g (5 oz) fresh red chilies 2 tbsp dried shrimp 1 tbsp belacan 1 tbsp palm sugar 1 tbsp tamarind juice 1 tsp salt Method: - Blend the onion and garlic with some oil with an electric blender. Add some water to facilitate blending if necessary. - Boil the dried chili in water for ten minutes. Remove and drain. - Cut fresh red chilies into sections. Blend both chilies with some oil and water to form a chili paste. - Soak the dried shrimp in water for fifteen minutes. Drain. Blend the dried shrimp until it looks like meat floss. - Place the belacan in a small pan without oil, roast it slowly until it is thoroughly dry, and break up into large granules. - Saute the onion and garlic over low to medium heat until slightly brown and aromatic. - Soak the tamarind pulp in hot water for ten minutes, then remove the pulp and seeds by pouring through a strainer. - Add the dried shrimp, belacan, palm sugar chili paste, and tamarind juice to the sambal. This year Malaysia will be celebrating 59 years of independence from the British on August 31st 2016. So, throughout this month, I'll share some of my favorite food, that is uniquely Malaysian, and I hope you will like them too. I'll start with the most popular breakfast dish in Malaysia, called Nasi Lemak. The basic meals consist of coconut milk rice, Sambal, hard-boiled or fried or egg, cucumber, slices, fried anchovies and peanuts. Other great accompaniments are deep-fried chicken, Sambal Sotong Kering, etc. This is my “Best Sambal” recipe for Nasi Lemak. There is a bit of prep involved, but the result is worth the effort. The sambal is delicious, slightly spicy and aromatic. It compliments very well with the traditional-styled steamed coconut rice, which I am going to share with you on my next post. Best Sambal (Nasi Lemak Sambal) Ingredients 1) 200 grams of Shallots 2 Pieces Thinly Slice Galangal 4 to 5 Tbsp of Peanut Oil 2) 150 grams Fresh Red Chilies, chopped 4 Tbsp of Dried Shrimps, soaked for 20 minutes 4 to 5 Tbsp of Peanut Oil 3) 50 grams Dried Chilies, cut into smaller segments, soaked in boiling water for 20 minutes, drain well 4 to 5 Tbsp Peanut Oil 2 tsp Roasted Belacan, crumbled 3 Tbsp Sugar 30 grams Tamarind Paste mix with 1/2 cup of Water, discard seeds 1 Large Red Onion, halved, sliced 3 Pandan Leaf, knotted Sea Salt, to taste Peanut for frying Full Recipe: 🤍
Sambal Ulek (or Oelek) made the real way, with a Cobek dan Ulekan. Or Mortar and pestle. Contrary to popular misbelief, oelek/ulek doesn't mean the mortar and pestle. Ulek means to grind, hence sambal ulek. Like pesto comes from the word pestare, same meaning. More ranting on the blog post.🙂 All you need: Red chillies Salt Vinegar or Lime juice That's it. Use it as a cooking ingredient when the recipe calls for chillies or chilli paste. Recipe: 70g dried chillis 3 cloves garlic 1 medium onion Thumb size ginger 3 tbsp oil, for blending 1 tbsp brown sugar 1/2 tsp salt 4 tbsp oil for sauté Method: Cut the washed dried chilli into small pieces. Soak in hot water for 15 minutes, drain the water and add into the blender, then add in garlic, onion, ginger and oil. Blend the chilli into fine paste, heat oil in a saucepan, sauté the chilli paste till the oil is separated from it. Let it cool completely and keep in refrigerator for up to 2 weeks! The paste will last for three months in the freezer.
