Nick Massie: Pecan Chicken Salad Nick Massie of the CrossFit Culinary Ninja specialty course shares a lighter take on traditional chicken salad. This recipe is perfect if you want some easy meal prep for those warm spring days and hot summer nights. Ingredient List: 42 oz. of chicken breast (cooked weight) 10 c. red grapes, halved 10 c. celery, diced 1 c. honey 1 c. Massie Mayo 1 c. of apple cider vinegar 2 tbsp. poppy seeds 1 c. pecans, toasted and chopped or smashed Kosher salt, as needed Course ground black pepper, as needed Preparation Instructions: 1. Preheat the oven to 350 F. 2. Prepare chicken breast by lining a sheet pan with foil, seasoning the pan with kosher salt and pepper, laying the chicken breasts out on the pan and seasoning the top sides. 3. Pour the pecans onto another sheet pan and spread out evenly. 4. Place both sheet pans into the preheated oven. Cook the pecans for 5-10 minutes or until nicely toasted (be sure to watch carefully, as these can burn quickly). Cook the chicken breasts to an internal temperature of 165 F. 5. While the chicken is cooking, prepare the Massie Mayo. 6. Once the chicken has reached 165 F, remove from oven and chill in the refrigerator until completely cooled. When this is achieved, dice into chunks similar in size to the grape halves. 7. In a large mixing bowl, whisk together honey, Massie Mayo, apple cider vinegar, poppy seeds and a pinch of kosher salt and pepper. Add diced chicken and toss or stir to incorporate. 8. Pour in the grapes and celery and mix again. Add pecans and stir one last time. 9. Portion out and store in the refrigerator for up to one week. Enjoy! Yields 13 portions. I believe that I shot this video around first part of July. around the same time that I made the BBQ. I hope you will give it a try. My Grandmother Gertie used to make her chicken salad this way. SO GOOD! Great picnic food, family gatherings and days when you just don't want to cook. You can make your chicken up ahead of time and freeze it. 3 cups of Chicken Breasts - cubed to bite size or cut how you prefer. (I happened to have grilled this chicken as shown in a previous video. You can cube it up and cook and make in a skillet. You can use baked chicken, you can use crock pot chicken. Just whatever you like. Heck, you could I guess get a rotisserie chicken from the grocery store and use that. 1 apple cored and chopped 1/2-1 cup chopped pecans 1 cup SEEDLESS grapes cut in halves or quartered depending on size. Use whatever grapes you prefer. I actually used 1/2 cup black and 1/2 cup red 1 cup minced celery 2-3 Tablespoons of orange juice 1/4 up to 1 cup of mayonnaise, enough to make it "stick" as my Auntie Allene used to say. I ended up using close to a cup of mayonnaise. Sometimes you need to add a little more after refrigerating the next day. Salt and Pepper to taste Optional Ingredients: diced or minced onion (I prefer to add fresh right before serving, so they stay crunchy and if you add in the beginning they can overpower the chicken) Y dehydrated minced onion to taste. green onions (Spring) sliced A tiny bit of Dijon or Creole mustard to taste (or just add mustard of your choice on one side of your bread when making sandwich) A touch of paprika Cajun seasoning You may substitute fresh lemon juice for the orange juice Mix thoroughly and best when chilled for a few hours in the refrigerator. Eat on bread of your choice adding lettuce or just eat in a bowl on a bed of lettuce. Stays good in refrigerator for 2-3 days. (I personally do not care to keep anything like this for more than 3 days)This is very good. I hope you will give it a try. Enjoy! *NOTE: you may add whatever you enjoy in your chicken salad with caution, you do NOT want to overpower the flavors already there, this salad is EXCELLENT just as I made it on camera. Make it first and see how you liked it and then if you wish, tweak it the next time around. This is so good, it stands on its one without 3 million additional ingredients.

Cranberry Apple Pecan Chicken Salad 4 C cooked chicken, chopped 3/4 C Mayo 1/4 C Greek yogurt 2 tsp Dijon mustard 1/4 tsp salt 1/4 tsp pepper 1/4 tsp onion powder 1/3 C dried cranberries 1/3 c pecans, chopped 1 Granny Smith apple, peeled and diced In a large bowl, mix together Mayo, yogurt, mustard, salt, pepper and onion powder. Once combined, stir in cranberries, apple, pecan and chicken. Apple Pecan Cranberry Chicken Salad Serves 4 12 oz can chicken breast, drained ¼ cup diced granny smith apple 3 Tbsp low sugar dried cranberries 2 Tbsp pecan chips ¼ cups non-fat plain Greek yogurt 1 tsp Dijon mustard 1 tsp honey 1 tsp lime juice 1 tsp poppy seeds ¼ tsp onion powder ¼ tsp salt ¼ tsp black pepper DIRECTIONS 1. Combine chicken, apple, cranberries, and pecans in bowl. 2. In a separate small bowl, combine all remaining ingredients and whisk well to combine. 3.
