I can't even wait until it cools down Lol. lasagna/lazanya is an Italian dish made of stacked layers of thin flat pasta alternating with fillings such as ragù (ground meats and tomato sauce) and other vegetables, cheese, and seasonings and spices such as garlic, oregano and basil. The dish may be topped with melted grated mozzarella cheese. Typically, the cooked or oven-ready pasta is assembled with the other ingredients and then baked in an oven. The resulting lasagne casserole is cut into single-serving square portions. FRESH RICOTTA ▪½ gallon/2000g whole milk ▪200g or 3/4c + 2 Tbsp heavy cream ▪15g or 2 1/4tsp salt ▪100g or 1/3c + 1Tbsp white distilled vinegar Place 4 layers of cheesecloth in a colander with bowl underneath (i use a salad spinner with basket). Add milk, cream, and salt to a sauce pan and heat over medium for 10 min, whisking frequently, until temp reaches 190F/88C. At this point, add vinegar. Very gently stir with spatula or whisk to combine. Allow to sit for 15 minutes to allow milk to break. Curds and whey should be separated. Gently pour mix into cheesecloth setup then lift out cheesecloth and allow to drain for about 20min. Now you have fresh ricotta. MEAT SAUCE 1lb/450g 80/20 ground beef 2 115g/4oz Italian sausages, meat removed from casings Olive oil 25-30g or 2Tbsp butter 200g or 1 lrg onion Salt 20g/5 cloves garlic, minced Chile flakes 2 28oz cans crushed tomatoes 5-7g or 1-2tsp sugar Spread ground beef and sausage meat flat onto a sheet tray. Cook under the oven broiler for 15 minutes (or roast in oven at highest temp). While that cooks, add 25-30g olive oil and butter into large heavy bottomed pot. When melted, add onion and pinch of salt. Stir and cook onions until softened and translucent. Add garlic and chile flakes. Cook for about a minute until fragrant. Add crushed tomatoes. Add 10g salt and stir to combine. Simmer for about 5min. Check broiling meat. When done, it should be browned and cooked through. Crumble into small pieces then add to tomato sauce along with any drippings, stir and continue to cook for 20-30 minutes. Sauce should have reduced by about half. To finish, taste for seasoning. Add a pinch more salt, if needed, and sugar to balance. Stir and taste again. THE BUILD AND BAKE Meat sauce 1box no boil lasagna noodles (or reg lasagna noodles soaked for 5 min in water before building) 1lb/450g full fat mozzarella, shredded 1/2c grated parm 6-9 slices fresh mozzarella Layer ingredients as follows into a 9x13 baking dish: 1/2c meat sauce spread, a single layer of lasagna noodles, 9 spoonfuls of the ricotta mixture, 1c shredded mozz, 3/4c meat sauce, a layer of noodles, 9 spoons ricotta mix, 1c shredded mozz, 1c meat sauce, noodles, 9 spoons ricotta mix, 1c shredded mozz, 1c meat sauce, noodles, 1c meat sauce, 1c shredded mozz, grated parm, 6-9 slices of fresh mozz Cover tightly with oiled piece of foil and bake in preheated 375F/190c oven for 25min. Remove foil and return to bake uncovered for 25min. Finish by broiling for 2-3 mins on high to brown top. Allow to cool for 30 min before cutting and serving. 🎧MUSIC: EPIDEMIC SOUND. Over the years she adapted the recipe and the result is a green lasagna, layered with a pork ragù and béchamel sauce. This is Maria's second appearance for Pasta Grannies! For the pasta: 10 eggs 1 kilo 00 flour 100g fresh spinach, leaves only For the ragù: 2 garlic cloves, 2 to 3 sage leaves (wrapped in muslin) 50g unsmoked pancetta, diced 1kg minced pork (Maria uses loin) 1 litre meat stock (Maria uses beef) 1 x 400g tin of tomato paste salt For the béchamel : 100g butter 100g flour 1 litre whole milk 1/2 a nutmeg, grated For sprinkling: 50g Parmigiano (or more, if you feel like it)

👇🏽LASAGNA RECIPE👇🏽 12 oz oven ready lasagna noodles (no boil lasagna) 24 oz Mozzarella Cheese (use more or less as desired) Meat Sauce 2.5 lbs ground beef 48 oz marinara sauce PLUS 1 cup of water (use a high quality sauce) 1/2 diced white onion 5 minced garlic cloves 1 Tbsp Italian Seasoning 1/2 Tbsp Beef Bouillon Powder 1 Tsp dried Basil 3/4 Tsp Cayenne Red Pepper (optional) 1/4 Tsp black pepper Salt Fresh Parsley *Sugar (This is not a rule! Please taste your sauce and use your best judgement if your sauce is very acidic. Add sugar as needed) Ricotta Cheese Mix(make to your taste) 15 oz whole milk Ricotta Cheese Grated Parmesan cheese garlic powder Cajun seasoning (optional) Salt Fresh Parsley 1 egg (add last) *NOTE: I used a 13 x 9 1/2 inch casserole dish and baked for 1 hour, broiled for 3 minutes. When making the meat sauce please taste as you go! If you prefer NOT to use Marinara Sauce then you may use any pasta sauce (e.g. garlic and herb, tomato and basil, tomato basil garlic ) and taste as you go..... meaning gradually add seasonings to your sauce and make any adjustments as desired. If you prefer you may brown your meat and onions, add pasta sauce, THEN gradually add seasonings! The outcome of your lasagna is based on how well your meat sauce tastes. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and wine. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally. 2️⃣ 02:48 - Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water. 3️⃣ 03:19 - In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna. 4️⃣ 03:52 - Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan or lasagna dish. 5️⃣ 04:00 - To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Remove and strain most of the fat, preserving enough to cook your veggies. Finely chop onion and celery and sauté over medium heat until they become soft. Mince Garlic or use paste - along with fresh herbs and add to onion mixture. Cook until garlic becomes fragrant. Deglaze with red wine and reduce by half. (2-3 minutes) Add in tomato sauce & crushed tomatoes and incorporate. (2-3 minutes) - Add back in the ground beef/sausage. Add italian seasoning and fresh basil along with cayenne pepper or red pepper flakes if desired. Mix in 1/4 cup of Heavy Cream and 1/4 cup Parmesan cheese. Cover and let this sauce simmer for 1-4 hours (stirring occasionally). Wait until the end to season with salt. Adjust the flavors as needed. You can use a pinch of sugar to balance the acidity as needed. Cook noodles to package instructions. (Heavily salt pasta water) Strain and set aside. In a separate bowl, mix together Ricotta Cheese, sour cream, and 1/2 of your shredded cheese. Season with salt, pepper, Italian seasoning, garlic, and onion powder. (Taste as you go! Make sure the ricotta mixture tastes good before you mix in your egg) Mix in your egg and chopped parsley with the ricotta mixture and set aside. Add a little sauce to the bottom of your baking dish and begin to add a layer of pasta. Then add a layer of your cheese mixture and then sauce again and repeat until the dish is full. Top the dish with the remainder of shredded cheese, cover and bake at 375 for about 30 minutes and then remove the cover and bake for an additional 15 minutes or until browned and bubbling. Garnish with some chopped basil.

Place a large pot of water over high heat. 2. Once water comes to a boil, add lasagna noodles and boil for 8-10 minutes. Once done, drain noodles, then sit aside. 3. Add sauce, diced tomatoes, and tomato paste to a pot. Add white sugar and Italian seasoning, then stir in well. 4. Chop large onion into small pieces. 5. Place a pan over high heat. Add ground beef, sweet Italian sausage meat, and onions. 6. Chop and break meat into small pieces while frying. 7. Once brown, add salt, garlic powder, minced garlic, and pepper. 8. Cook until well done. 9. Once done, drain excess oil. Afterwards, place meat into pot of sauce, then stir well. 10. Add shredded mozzarella cheese, sour cream, ricotta cheese, and chopped fresh spinach to a big bowl, then stir in well. 11. Preheat oven to 350 degrees. 12. Coat the bottom of a baking pan with a little meat sauce. 13. Top with 4 lasagna noodles. 14. Coat with spinach cream mixture. 15. Add some shredded cheddar cheese and shredded mozzarella cheese. 16. Coat with 2nd layer of meat sauce and continue layering until pan is full. 17. Top with meat sauce, cheese, and fresh parsley. 18. Bake for 45-50 minutes.
This recipe is for how to make Italian-American Lasagna. This is the one that many Americans know and love. There are a couple of tricks to making a perfect lasagna that's not runny and easy to assemble. This classic lasagna recipe with meat sauce is made with a hearty ragu, ricotta, mozzarella, and Pecorino Romano cheese. Make sure to let the lasagna rest for at least 30 minutes prior to eating. Enjoy! Use this MEAT SAUCE RECIPE: 🤍 MEAT SAUCE SERIES: 🤍 INGREDIENTS: -4-5 cups meat sauce -1 pound lasagna noodles - Dececco brand works well -1 pound mozzarella cheese - sliced -1 cup Pecorino Romano - grated For the ricotta mixture: -1 pound ricotta - drained overnight or for at least 2-3 hours -1/4 cup parsley - minced -1/4 cup basil - minced -2 eggs -1 teaspoon kosher salt -1/4 teaspoon black pepper INSTRUCTIONS: 1. Bring a large pot of water to a boil and add 2 tablespoons of kosher salt and a touch of olive oil to it. Boil the lasagna noodles (work in batches) to very al dente (about 4-5 minutes). Scoop out sheets with a mesh strainer or pasta spider and shock in cold water. Lay flat the lasagna noodles on parchment paper or clean dish towels. 2. In a 9 by 13 (or 10 by 15) baking dish place a drop of olive oil and wipe the bottom and sides. Next add a thick layer of meat sauce, completely coating the bottom of the baking dish. 3. Place 6 lasagna noodles on the first level (they should slightly overlap). Spread a thick layer of the ricotta mixture onto the noodles, then layer 1/3 of the mozzarella, another thick layer of meat sauce, and finally 1/3 of the grated Pecorino Romano cheese. 4. Add 2 more layers to the lasagna. On the top layer just add the sauce, mozzarella, and Pecorino Romano. 5. Cover the lasagna with a lightly oiled tin foil cover. An even better way to cover the lasagna is to place parchment paper on top of it, then the foil. 6. Bake the lasagna covered at 375f for 45 minutes in the middle of the oven. Remove foil after 45 minutes and bake uncovered for 15-20 minutes more until the side noodles are crispy and the cheese is bubbly. Enjoy! NOTE: Let the lasagna rest at least 30 minutes before eating.
