In simple terms mixing is the even distribution of ingredients throughout the dough. But of course, it is more complicated than just that. The mechanical action of mixing develops the gluten network inside the dough. How does gluten work? Gluten is created as soon as flour is mixed with water. Flour contains two proteins that work together to create gluten – glutenin and gliadin. Glutenin helps develop dough structure and elasticity. Gliadin gives dough the ability to be stretchy (extensibility). Learn how to knead dough by hand for pizza, bread etc..., with my 3 steps process. Kneading dough can be done in a mixer, with a dough hook, or by hand. After you have mixed wet and dry ingredients together, you will have a shaggy mass. Transfer this dough to a lightly floured surface. A good dough should be slightly elastic, not dry but slightly moist and almost sticky. Good dough kneading technique takes 3 steps that you will repeat over and over: Fold, Push and Turn. 1. Lift the dough and fold the dough over onto itself. 2. Push down and forward with the palms and heels of your hands to the center of the mass. 3. Give it a quarter turn and always turn to the same side. Continue kneading and turning. If the dough sticks, just scrape it up, dust the counter with flour and continue. The well-kneaded dough should be smooth and elastic. To test dough made from mostly white bread flour, pick up the dough and stretch it back. Look at the surface. It should be smooth. There also should be some resistance from the gluten when you pull on the dough. The same test applies to whole-grain flours. Easy Jalapeño cheddar bread. No knead jalapeño cheddar bread. This is another bread recipe that anyone can make. 375g (3 cups) flour 12.5ml (2 ½ teaspoon) yeast 10ml (2 teaspoon) salt 120g (1 ½ cup) grated sharp cheddar 70g (½ cup) sliced pickled jalapeno peppers 360ml (1 ½ cup) warm water Mix all ingredients. Let rise covered for 2 hours. Shape into ball, let rise for about 45 minutes while oven is heating at 450F ( 230C) Bake covered for 30 minutes Remove the lid and bake for another 15 minutes. Let cool before cutting. Fancy making your own quick and easy Dinner Rolls at home. Here's what you'll need: Ingredients: 3 cups all purpose flour (375g) ¼ cup sugar (50g) 1 tsp salt (5g) 2 and ¼ tsp instant yeast (7g) 1 whole egg 1 cup warm milk (250ml) 4 tbsp softened unsalted butter(50g) Eggwash: 1egg + 2 tablespoons milk, beaten This recipe yields 18 pcs dinner rolls. *Bake in a preheated oven at 180°C(350°F) for 20-22 minutes. I'm using a conventional oven which heat rises from the bottom. *Proofing time may vary depending on the temp of your workplace. It may take between 1-2 hours or wait until it doubles in size. *Not as soft as the kneaded version but still a good kind of bread.😊 Why is it important to weigh your ingredients? ▪A scale delivers a level of accuracy that using a measuring cup cannot bring when weighing liquids. #shorts #nokneadbread #noknead How to make easy no knead bread / sourdough! (: This is the dutch oven i use: 🤍 Any dutch oven with a lid works beautifully! Ingredients: 430g bread flour (3.5cups) 390g water (1.5c + 2tbs) 12g salt (2tsp) 1/4tsp yeast Use high gluten (bread flour) for best results and that chewy crumb! Method: - Mix everything together until there is no more visible flour - Cover with a damp towel or plastic wrap. - Ferment at room temperature for 12-18+hours (this loaf was 16hr) - After the time, wet your hands and stretch and fold in all the sides. - Move to parchment paper, seam side down. (this makes putting the bread in easier) - Proof for 2 hours (i use the same bowl to cover it) - Preheat your oven with your cast iron or dutch oven for 1 hour (450F) - Dust the of your loaf with a little flour and cut straight down the middle. - You can use a scissor for this part too. This lets the steam escape in a controlled manner. - Transfer your bread into your pan carefully. - Bake Covered for 30 minutes. - Take the lid off and bake uncovered for 25-30minutes more. - Let it cool on a wire rack. Boom Bbby!!!! Nice job!! The key to the crust is to bake it longer than you think. Your oven is going to be dark so the bread will look darker than it actually is. I usually go the full 30minutes. For a funky sour flavor, let your dough cold ferment in the fridge for 3+ days. (after the initial 12-18hrs). The wait is worth it!!
