Louisiana produces 90% of the United States crawfish. Most of the farmed crawfish comes from rice fields in one small area of Cajun country. There, the industry is fairly new. In the 1980s, rice farmers experimented with cultivating crawfish in their fields. And it paid off. Today, business is booming, clearing the way for the next generation of farmers like Madison McIntyre. Using a meat grinder, use a chopper plate that will grind the meat into chunks and place in bowl. Add salt and cayenne pepper to the grounded pork and mix. Stuff the pork into the andouille casing. Place the raw andouille into a smoker and allow to cook for 2 to 24 hours. 🇺🇸Jambalaya: In a cast iron pot, add hog lard and bring to a simmer. Once simmering, add chopped onion and cook until caramelized. Mix in pieces of chopped pork and allow to cook until it’s tender. Add chopped andouille and cook until brown. Take everything out. Bring water to a boil then add crawfish to boiling water. Add frozen corn to the mixture and let sit for 20 minutes. Back in the Atchafalaya Basin with Kip Barras and Shannon Kidder. This trip was different than the others, the water was low in the basin so we took the Gator Tail (crawfish skiff with motor made to go in shallow water). The low water made it tough to get way back in the woods, once there the crawfish were running real good. The conditions made for a very interesting trip. We cut up and laughed the whole day. We also found a one in a million "Blue Crawfish". The second part of the video was Kip cooking boiled crawfish for 500 people. The blue coloration in crawfish is due to a genetic mutation that causes an increase in the production of a blue pigment called astaxanthin. Astaxanthin is a carotenoid pigment that is found in many organisms, including algae, crustaceans, and fish. It is responsible for the reddish-orange color of salmon and trout flesh. In blue crawfish, the astaxanthin is produced in such large quantities that it overwhelms the natural reddish-brown color of their shells, resulting in a bright blue appearance. Blue crawfish are particularly common in Louisiana, where they are a popular food item and are often referred to as "blue crabs" or "blue lobsters". While they may look different, blue crawfish taste just as delicious as their more common brown or red counterparts. Blue crawfish are relatively rare compared to other colored crawfish. Depending on the species, the frequency of the blue coloration can range from less than 1% to around 10% of the population. In some areas, blue crawfish may be more common due to a higher prevalence of the genetic mutation that causes the blue coloration. Blue crawfish are also more commonly found in certain regions. For example, they are more prevalent here in Louisiana and other parts of the southern United States, where crawfish are a popular food item and are heavily harvested.

Peeling a crawfish can be a little tricky at first, but with some practice, you can become an expert. Here's a step-by-step guide on how to peel a crawfish: Step 1: Twist the head off Hold the crawfish by the head with one hand and the tail with the other hand. Twist the head off by pulling it away from the tail. You can discard the head or save it for making stock. Step 2: Remove the first two segments of the shell The first two segments of the shell are the ones closest to the tail. Use your fingers to pinch the shell and peel it away from the tail. Discard the shell. Step 3: Pinch the tail meat Locate the tail meat, which is the long, thin piece of meat that runs along the length of the tail. Pinch the meat at the base of the tail with your fingers. Step 4: Gently pull the meat out Gently pull the tail meat out of the remaining shell. It should come out easily if you've pinched it correctly. Be careful not to squeeze too hard and break the meat. Step 5: Remove the vein (optional) If you want to remove the vein, which is the dark line that runs along the back of the tail meat, use a small knife to make a shallow cut along the top of the meat. Use the tip of the knife to lift the vein out and discard it. Step 6: Enjoy the meat The tail meat is now ready to eat! You can eat it plain or dip it in your favorite sauce. Repeat the process with the remaining crawfish until you have peeled them all. With some practice, you'll be able to peel crawfish quickly and easily, and enjoy the delicious meat inside.
