Drizzle in butter while spinning. When ready, it should be able to hold itself together when you squeeze it. If it’s still crumbly, spin in a bit more butter. Par bake at 350F/175C for 10 minutes - CHEESECAKE FILLING ▪900g/4 blocks cream cheese, room temperature ▪225g/8oz goat cheese, room temp ▪240g or 1c sugar ▪5g or 1tsp salt ▪30g or 1/4c corn starch ▪125g or 1/2c sour cream ▪Zest of 1 lemon ▪5g or 1tsp vanilla extract ▪5 whole large eggs + 2 yolks Mix cream cheese, goat cheese, sugar, salt, and corn starch using paddle attachment on medium speed, scraping sides of bowl after about 30 seconds. Mix for another minute or so until well combined. Add in sour cream, lemon zest, and vanilla and continue to mix for another minute until combined. Scrape paddle and bowl well. With mixer on medium, add eggs, 1 at a time, mixing until just combined, scraping sides halfway through. Careful not to over mix/whip after the eggs are added. Pour mixture into fully cooled crust shell. Bake at 325F/160C for 60 minutes. At this point, the cheesecake should have risen and still be jiggly in the center. Turn off oven and allow to cool in the oven, door closed for 45 minutes. Remove from the oven and allow to come to room temperature. Tent with foil and refrigerate for at least 10 hours. - CHERRY TOPPING ▪350g/12oz Frozen Dark Cherries (i’m using unsweetened frozen) ▪Pinch salt ▪150g or 2/3c sugar ▪1 lemon, zest and juice Add cherries, salt, sugar, zest and juice of lemon to a saute pan over high heat. Bring to a boil and allow mixture to cook down for 5-6 minutes until syrupy. When done, temp should be around 225F/105C. Remove from heat and transfer to a bowl to cool. Chef Anna Olson takes you step by step through her amazing New York cheesecake recipe. This makes a 1 9-inch cheesecake. CRUST INGREDIENTS - 1 cup (225 g) graham cracker crumbs - 2 Tbsp (25 g) sugar - ¼ cup (60 g) unsalted butter, melted, plus extra for greasing the pan CHEESECAKE INGREDIENTS: - 4 pkg 250 gram packages of cream cheese, at room temperature - 1 1/4 cup + 2 Tbsp (275 g) sugar - 3 Tbsp (22 g) cornstarch - 2 tsp (10 ml) vanilla extract - 2 tsp (4 g) finely grated lemon zest - 3 large whole eggs - 1 large egg yolk - 1 ½ cup (375 ml) sour cream (not low-fat), divided - 2 tsp (10 ml) lemon juice CRUST DIRECTIONS: 1. Preheat the oven to 350ºF (176 C). 2. For the crust, stir the graham crumbs, sugar and melted butter until evenly combined and press this into the bottom of an ungreased 9-inch springform pan. 3. Bake this for 10 minutes, then cool. Brush the sides of the pan with a little melted butter. CHEESECAKE RIRECTIONS: 1. For the cheesecake, increase the oven temperature to 400ºF (205 C). 2. Beat the cream cheese until light and fluffy. Add the 1 ¼ cups of sugar a little at a time, and scraping the sides and bottom of the bowl often. 3. Beat in the cornstarch, vanilla and lemon zest. 4. Beat in the eggs one at a time, on a lower speed, and scraping after each addition, then beat in the yolk. 5. Still on low speed, beat in ¾ cup of sour cream. Scrape this over the cooled crust. 6. Bake the cheesecake for 10 minutes at 400ºF (205 C) and then reduce the oven temperature to 225ºF (107 C) and bake for 25 more minutes. Turn off the oven, and leave the cheesecake in for an hour, cracking the oven door after 30 minutes. While the cheesecake is baking, prepare the sour cream layer. 7. Stir the remaining ¾ cup of sour cream with the remaining 2 Tbsp of sugar and the lemon juice. Spread this over the top of the cheesecake as soon as it has come out of the oven. 8. Allow the cheesecake to cool completely to room temperature, then carefully run a spatula around the outside of the cheesecake to loosen it from the pan, then chill the cheesecake for at least 6 hours before slicing and serving. The cheesecake will keep, refrigerated, for up to 4 days. Preheat oven to 150°C. Grease and line the base and side of a 20cm (base measurement) springform pan. 2. Process biscuits in a food processor until finely crushed. Add the butter and process until well combined. Spoon into prepared pan. Use a straight-sided glass to spread and press over the base and side. Place in fridge for 30 mins to chill. 3. Use an electric mixer to beat cream cheese and sugar in a bowl until smooth. Add flour, vanilla, lemon rind and lemon juice. Beat until combined. Add the eggs. Beat until smooth. Add sour cream. Beat until just combined. Pour into base. 4. Place pan on a baking tray. Bake for 1 hour or until just set. Turn oven off. Cool in oven, with door ajar, for 2 hours. Chill for 3 hours before serving.

In a bowl mix graham cracker crumbs, sugar and butter, press onto bottom and slightly up the sides of 10-inch spring-form pan. Bake in oven for 10 minutes. While crust is baking, make the filling by beating the cream cheese, sugar, vanilla and lemon with electric mixer until smooth and well blended. Add eggs, 1 at a time, mixing at medium speed after each egg is added until all is blended making sure to scrape down the batter with a spatula. Add flour and mix until smooth. Remove crust from oven, but keep oven on and let the crust cool for 5-10 minutes then pour the filling over crust. Bake for about 50-55 minutes or until cake is cooked but has a slight jiggle in the center. Remove from oven, again keeping oven on and set aside for 5-10 minutes so it cools slightly while you make the sour cream topping. In a small bowl mix the sour cream, sugar, vanilla and lemon. Spoon over the top of the cheesecake and spread evenly. Put cake back in oven and bake for 10 minutes. Remove from oven and loosen cake from rim of pan with knife. Cool before refrigerating. Cover and refrigerate at least 3 hours or over night. Before serving, remove rim from pan and plate and slice cake. Garnish each slice with fresh strawberries and a drizzle of strawberry sundae syrup along with some whipped cream. Cooking Tips: Wrapping foil around the bottom of the pan helps to keep anything from dripping out while baking. It is best to store the cheesecake in the spring-form pan until ready to serve. The pan will protect it from getting bumped in the refrigerator. Slice cake using a hot, wet knife, wiping knife blade clean in between slices. Store leftover cheesecake in the refrigerator. Whipped Cream Cheese can be replaced for half of the recipe. I sometimes like to use 2 whipped and 2 regular 8 oz. packages. Other options for the crust: You can replace the Graham Crackers with Chocolate cookies or vanilla wafer, If making this recipe for Passover you can use crushed macaroons or crushed matzo for the crust in place of the Graham Crackers. If you need to replace the flour in the recipe you can use potato starch. Его достаточно просто готовить, а в результате получается невероятно вкусный и нежный десерт. Рецепт приготовления Основа. 1. Печенье 280 г. (рецепт 🤍 2. Масло сливочное 82% 120 г. 3. Грецкие орехи (не обязательно) 100 г. Ломаем печенье удобным вам способом, я просто раздавлю толкушкой. Вливаем в него масло и всыпаем орехи. Все перемешиваем и получаем липкую крошку. Форму 20 см застелить пергаментной бумагой и с помощью стакана или ложки сделать дно и борта. На дно должно уйти 2/3, остальное на стенки. Убрать форму в морозилку на 20-30 минут. Масса Чизкейка. 4. Сыр по типу Филадельфия 400 г. 5. Сахарная пудра 150 г. 6. Сметана 200 г. 7. Сливки 33-36% 150 мл. 8. Яйца С0 2 шт. 9. Крахмал кукурузный 2 ст. л. (без горки) 10. Ванильный экстракт 1 ч.л. (ванильный сахар 1 пакетик) 11. Сок лимона 1 ст. л. Растереть сыр с сахарной пудрой до растворения сахара, добавить в него сметану и сливки, и перемешать до однородности. Добавить в массу яйца поочередно, крахмал и ваниль. В конце добавить сок лимона. В итоге должна получится очень вкусная и нежная масса. Сборка и выпекание. Форму достаем из морозилки и переливаем в нее массу «Чизкейк». НАГРЕВ ТОЛЬКО НИЗ! Если верх не отключается, ну что сказать будет немного жаренный сверху, на вкус особо не повлияет. Для газовой духовки: На дно духовки ставим противень с кипятком, а чуть-чуть выше на решетку ставим наш Чизкейк, если все сделали правильно он окажется в середине духовки. Для электрической духовки: В духовку помимо самого чизкейка нужно поставить дополнительную емкость с водой, она должна быть большой площади и стоять уровнем ниже, чем сам чизкейк, Ко мне поступила информация, что если поставить противень с водой на дно духовки, она может сломаться, Если масштабы духового шкафа не позволяют соорудить такую объемную конструкцию, то берете глубокий противень с водой, ставьте его посреди духовки, дно формы, в которой собран чизкейк плотно оберните фольгой, чтобы сквозь нее не просочилась вода. И так ставите его прямо в воду. Выпекаем 180 С - 30 минут, не открывая духовки уменьшаем до 150 С - еще 30 минут. Далее снова же не открывая духовки, выключаем нагрев и оставляем так чизкейк стоять до полного остывания, часа 2-3. Убираем в холодильник на 6-12 часов (не в морозилку). Есть еще один вариант чизкейка, он тут 🤍 Чизкейк готов! The first 1000 people to use this link will get a 1 month free trial of Skillshare- 🤍 Home-made cream cheese recipe: 🤍 Full written recipe for Eggless New York style cheesecake Prep time: 15-20 minutes Cooking time: 1 hour Serves: 1 kg cheese cake Ingredients: • Parle G Biscuit 140 gm (you can use crackers biscuit too) • Melted butter 80 gm • Cream cheese 300 gm • Powdered sugar ½ cup • Fresh cream 3/4th cup • Condensed milk 180 ml • Vanilla extract 1 tsp • Thick curd 1/4th cup • Zest of 1 lemon • Lemon juice of half lemon • Corn starch 1 tbsp • Any berry compote Method: • Start by first crushing the biscuit, you can use, food processor, a zip lock bag or else you can use a clean and fresh cloth to crush the biscuit, add melted butter and mix well. Add melted butter with biscuit if using food processor or a zip lock bag. • Take a 8 inch spring form mould, and just set the base tray upside down, lock the spring form mould, doing this step will help to demould the cheesecake effortlessly. • Transfer the butter and biscuit mixture in the spring form mould & press it with a pav bhaji masher or any flat bottom utensil, you can use a glass as well, to even the surface, press nicely to make the base of the cheese cake. Bake the base in a preheated oven at 165 ℃ for 10-12 minutes. After baking remove and allow to cool down, by the time you can make the cheese cake mixture. • For making the cheese cake mixture, add the cream cheese and powdered sugar in a mixing bowl, make sure to sift the powdered sugar to avoid any grains, use a electric beater or hand whisk to beat the mixture, cream the cream cheese until the mixture is creamy in texture. • Further add fresh cream, condensed milk, vanilla extract, thick curd, lemon zest, lemon juice & corn starch, sift the cornstarch before adding, use a spatula to fold and mix well, make sure not to over mix the mixture. • Pour the mixture over the baked base and tap to remove any air pockets. • For baking cheesecake, we need to use water bath baking method also known as bain-marie, for that, use a foil paper and butter paper and wrap around the cake mould nicely. Further fill water in the baking tray and place the foil wrapped cheesecake in it. • Now, bake the cheesecake in a preheated oven at 165 ℃ for 45-50 minutes. • After baking the texture of the cheese cake will be a little wobbly, run a clean knife around the sides of the cake and cool down. HidaMari Cooking(ひだまりクッキング)へようこそ。 このチャンネルでは、チョコレートや抹茶、季節のフルーツを使ったお菓子のレシピを中心に投稿しています。 ▷チャンネル登録はこちら: If you like it, please click 'Like' and Subscribe. 🤍 ベルマークを押すと毎回通知が届くようになります。 動画の評価やコメントをいただけるととても嬉しいです♪ ーーーーーー こんばんは😊動画を見ていただきありがとうございます♪ 今日はリクエストの多かったニューヨークチーズケーキのレシピです^^ 寒くなってくると濃厚なスイーツが食べたくなりますよね。 湯煎焼きでどっしりなめらかな食感ですが、 チーズに入れたレモンとラズベリーのソースが爽やかな酸味をプラスして 食べやすく仕上げました♪ 秋になると洋酒の香りのするお菓子が食べたくなるのですが、 うちの試食係は「ラム酒すきじゃない〜」と言って食べなくなるので 今回はグランマニエを少し入れました。 お酒を入れるのはお好みでどうぞ^^ 混ぜていくだけの簡単なレシピですが、舌触りを良くするために 生地は1度濾してから焼いてください。 コーンスターチ入りのレシピなので、焼いたその日よりも 1晩冷やしてから食べるとチーズがどっしりして好きです♪ ▷Ingredients: -crust 70g graham cracker 20g melted butter -cheesecake 200g cream cheese 100g sour cream 65g cane sugar 8g vorn starch 2 eggs 130ml heavy cream 12ml lemon juice 1 tsp Grand Marnier -berry sauce 100g frozen raspberry 30g sugar 1 tsp lemon juice ▷材料(15cm丸型1台分): ■ボトム生地 グラハムクラッカー 70g(クッキーでも) 溶かしバター 20g ■チーズケーキ生地 クリームチーズ 200g サワークリーム 100g きび砂糖 65g(グラニュー糖でも) コーンスターチ 8g 卵 2個 生クリーム 130ml レモン汁 12ml グランマニエ 小さじ1 ■ラズベリーソース 冷凍ラズベリー 100g グラニュー糖 30g レモン汁 小さじ1 ▶作り方: 1.土台を作る。 グラハムクラッカー70gを細かく砕き、溶かしバター20gを入れてむらなく混ぜる。 2.紙を敷いた型に①を入れて敷き詰め、冷蔵庫で冷やす。 (クッキーが浮いてきてしまう場合は5分くらい焼いても。) 3.チーズケーキを作る。 クリームチーズ200g、サワークリーム100g、きび砂糖65gをよく混ぜる。 4.コーンスターチ8gをふるい入れ混ぜる。 5.卵2個を1個づつ割り入れて混ぜる。 6.生クリーム130mlを入れて混ぜる。 レモン汁12ml、グランマニエ小さじ1を入れて混ぜる。 7.生地を濾してから型に流し入れて(底取れの型は必ずアルミホイルを)、表面をならし、150℃に予熱したオーブンで1時間湯煎焼きにする。 8.型ごと冷めるまでオーブンの中で冷まし、冷蔵庫で一晩冷やす。 9.ラズベリーソースを作る。 冷凍ラズベリー(今回はストロベリーも入ってました)100g、グラニュー糖30gを火にかける。 10.果肉が潰れるまで弱火で煮て、色止めにレモン汁小さじ1を加えてひと煮立ちしたら火を止める。 11.ソースを濾し、チーズケーキに添えて完成。 ーーーーーー よく頂く質問などについて。 Q.バターは無塩ですか?有塩ですか? お菓子には基本的に無塩バターのみ使用しています。 今後は字幕に「無塩バター」と表記するよう心がけますが、 それ以前の字幕に「バター」としか書かれていなくても 「無塩バター」を使用しています。 Q.オーブンは予熱しますか? 焼成温度に合わせて予熱しています。 家庭用オーブンは庫内が小さく扉を開けた時に熱が逃げやすいため、 焼成温度+10〜20℃で予熱し、焼くものを入れてから焼成温度に合わせて焼いています。 こちらも今後は字幕で「〇〇℃に予熱したオーブンで□□分焼く」といった形で表記するように心がけます。 Q.倍量で作りたいのですが。 12cm丸型を15cm丸型に→1.5倍 12cm丸型を18cm丸型に→2.2倍 12cm丸型を21cm丸型に→3倍 15cm丸型を12cm丸型に→0.6倍 15cm丸型を18cm丸型に→1.5倍 15cm丸型を21cm丸型に→2倍 12cm(4.7inch)→15cm(6inch) =×1.5 12cm(4.7inch)→18cm(7inch) =×2.2 12cm(4.7inch)→21cm(8.2inch)=×3 15cm(6inch)→12cm(4.7inch) =×0.6 15cm(6inch)→18cm(7inch) =×1.5 15cm(6inch)→21cm8.2(inch)=×2 ▷濃厚テリーヌショコラの作り方: 🤍 ▷Youtube:🤍 ▷instagram: 🤍 もし私のレシピでお菓子を作ってくださったときは、 #hidamaricooking をつけて投稿してもらえると嬉しいです♪ またインスタグラムでは、YouTubeで公開していない写真も 公開していますので、よかったらフォローしてください。 ▷Twitter: 🤍 ▷Google+:🤍

Вам потребуется Печенье 300 гр Орехи грецкие обжаренные по вкусу Сливочное масло 82,5% 120 гр Сыр творожный 400 гр Сахарная пудра 150 гр Сметана 30%  200 гр Сливки 33% 150 мл Яйцо 2 шт Кукурузный крахмал 2 ст л Сок половины лайма Как готовить? Печенье измельчаем в крошку. Добавляем орех, перемешиваем, заливаем растопленное сливочное масло. Замешиваем пластичную массу для основания. Основание делаем стаканом, как на видео. В профиле я оставил подробный лайфхак) Убираем форму в морозилку, пока делаем начинку🥶 Сыр смешиваем с пудрой, вмешиваем сметану, вмешиваем сливки, добавляем 2 яйца, а после вмешиваем крахмал. Добавляем сок лайма для нейтрализации яичного привкуса. Замешиваем сырную массу до однородности и вливаем в песочную основу. Трясти и стучать чизкейком не нужно, аккуратно распределить массу вращающими движениями. Выпекать в 2 захода с противнем воды в духовке (см видео): первый заход 180* 30 минут, второй заход 150* 30 минут. Остужаем торт в духовке! Убираем на ночь в холодильник.
