Ingredients ▸ ½ cup rolled or quick oats ▸ ¼ cup unsweetened almond milk ▸ ½ ripe banana ▸ 1 egg (can omit) ▸ 1 Tablespoon maple syrup (I used monkfruit maple syrup) ▸ 1 Tablespoon peanut butter ▸ ¼ teaspoon baking powder ▸ Pinch of cinnamon ▸ Pinch of sea salt ▸ 2 Tablespoons chocolate chips (I used Lily’s) optional toppings: more peanut butter for drizzling, extra maple syrup and a splash of milk INSTRUCTIONS 1. Preheat oven: Preheat oven to 350°F. 2. Blend: Add all ingredients except for the chocolate chips into a blender and blend until fully combined. Stir in 1-2 Tablespoons of chocolate chips. 3. Cheesecake (yield: 1 9-in cheesecake) 1 1/2 lb (680g) cream cheese 1 1/3 c (264g) sugar 4 eggs 3/4 c (171g) heavy cream 2 tsp vanilla 1. Mix cream cheese and sugar until smooth. 2. Add in the eggs one at a time and mix until smooth before adding the next. 3. Finish with the heavy cream, vanilla, and any other flavorings 4. Pour into a 9-in cake pan that has been prepared with your choice of crust. 5. Bake at 300F in hot water bath. Start checking for doneness after around 1 hour though it may take longer. 6. Let cool in the fridge overnight before removing from the pan and slicing

Chiffon Cake (yield: two 8-in round layers) 1.75 c (210g) cake flour, sifted 1.5 tsp baking powder 1/2 tsp fine salt 3/4 c (150g) sugar 1/2 c (100g) vegetable oil 6 egg yolks 1/2 c (113g) water 1.5 tsp vanilla 6 egg whites pinch of cream of tartar 1/2 c (100g) sugar 1. Whisk together the oil, yolks, water, and vanilla in a mixing bowl. 2. Add cake flour, baking powder, salt, and first sugar and whisk to combine. 3. In the bowl of a mixer, whisk the egg whites with a pinch of cream of tartar until frothy. Add the second sugar one tablespoon at a time and continue to mix on medium-high speed until medium peaks form. 4. Gently fold the meringue into the first mixture. 5. Evenly distribute the cake batter between two 8-in cake pans that have been prepared with only a circle of parchment paper on the bottom (no grease!) 6. Bake at 350F (177C) for 30-35 minutes or until golden brown and a toothpick comes out clean. 7. Remove from the oven and let the cakes cool upside down on a sheet of parchment. 8. Once completely cool, remove the cakes from the pan.

Episode 21 of #SmallServeDesserts, a series where I bring you recipes for people who want to experiment with baking in small batches and want to avoid investing in ingredients in big quantities ❤️✨ It's #worldbakingday today 🎂✨, and what better way to celebrate it than with this delight of a recipe that is the perfect celebration of summer 🤌🥭This super creamy and smooth mango cheesecake is made from crushed digestive biscuits and cream cheese, topped with mango jelly 🥰So, let’s bake together today to share this joy with our loved ones and enjoy sunshine on a plate🥰 Happy Baking❤️ Ingredients- 🥭1/4 cup crushed biscuits 🥭1+1/2 tbsp melted butter 🥭6 tbsp cream cheese 🥭2 tbsp fresh cream 🥭1/2 tbsp cornflour 🥭2 tbsp mango puree 🥭1/4 cup condensed milk Instructions: 1. In a food process add the biscuits and process them until fully crushed. Transfer to a large bowl. Add melted butter and combine using a spatula. 2. Transfer the biscuit crumbs into a 4-inch springform pan and press down evenly. Set it in the fridge for 10-15 minutes. 3. In a large bowl add cream cheese, condensed milk, mango puree, fresh cream and cornflour. 4.Mix the batter using an electric whisk until completely smooth transfer this on top of the biscuit base. Seal the bottom of the springform pan with two layers of aluminum foil so nothing leaks out. 5. Set the springform pan in a bigger baking dish with hot water creating a water bath. Put the cheesecake to bake in a preheated oven 🤍160 celsius for about 40-50 mins. 6. Once baked fully run a knife around the edges while the cheesecake is still warm. Transfer the cheesecake into the fridge to cool for about 7-8 hours. 7. For the jelly- In a bowl, add half of the store-bought jelly mixture and mix hot water as mentioned in the packet. 8. Pour the jelly mixture on top of the cheesecake and refrigerate for 40-45 mins. Flavor: milk Yield: 16 Scones Ingredients 3 cups plain flour 1/2 level tsp salt 120 g butter 1/2 cup fresh milk 3tsp baking powder 1/2 tsp baking soda 1/4 powdered milk (optional) 1/2 cup white sugar 1 tsp vanilla essence 2 large eggs Procedures 1. Preheat oven to 180°C degrees. Grease 2 baking trays; set aside. 2. In a large bowl, sieve together flour, salt, baking soda, baking powder and powdered milk. Add butter. Using your fingers, work butter into flour mixture until a crumbly mixture is formed (like breadcrumbs). 3. In a medium bowl, whisk together 2 eggs, white sugar, vanilla essences, and milk. Add egg mixture to flour mixture and stir to combine. 4.Turn dough out onto a lightly floured work surface; knead lightly and shape into a round. Roll dough out until it is 2,5cm thick. Using a 7,5cm biscuit cutter/ small glass, cut out scones and transfer to prepared baking trays. 5. In a small bowl, beat remaining egg and brush the top of each scone. I love preparing my own seasonings, and this combination is just perfect. One good thing about this baked chicken is you can prepare as much as you want because it makes perfect leftovers. Chocolate Chip Muffins (yield: 6 large or 12 standard muffins) 2 1/4 c (315g) AP flour 1/2 c (100g) sugar 1/2 c (107g) brown sugar 2.5 tsp (12g) baking powder 1 tsp (6g) fine salt 2 eggs 1/3 c (66g) vegetable oil 4 oz (57g) butter, melted 3/4 c (170g) whole milk 1 tsp (5g) vanilla extract 1 c (170g) mini chocolate chips coarse sugar for the tops 1. Mix all the dry ingredients together in a bowl. 2. In a separate bowl, whisk all the wet ingredients together until combined. 3. Mix the dry and wet ingredients together and stop mixing as soon as you can't see any dry flour. If there are some small clumps, that is ok. 4. Gently mix in the chocolate chips. 5. Divide between 6 large muffins or 12 standard size muffins. 6. Top the muffins with a generous sprinkling of coarse sugar (I prefer sanding sugar but turbinado or demerara also work well) 7. Bake at 400F for 20-25 min for large muffins or until a toothpick inserted in the center comes out with a few wet crumbs.
