We’re ending January on a healthy note, by kicking off the adlai series of recipes that I’ll be rolling out all year long! In between all the homemade bread and pastry videos, I’ll be sharing more recipes to give you inspiration to eat more adlai in your life! Why? Because 2021 is the year to get your blood sugar levels in order by consuming more low-glycemic food, and Adlai is the staple you’ve been waiting for. Forget the farro and quinoa, we’ve got our own ancient grain ready to take the world stage. Check out this first video where you can learn how to properly prepare this basic staple, what to look out for, and 3 ways to jazz up your leftovers into asian delights. BASIC ADLAI PREPARATION I like to cook adlai to a ratio of a little over 1:2 grain to water. So if I were to cook 2 cups of Adlai, I would then cook it in 4.5 cups of water. I also prefer to cook it on the stove so I can control cooking time rather than using a rice cooker. I find that rice cookers undercook it to my personal liking. See video for full instructions. YANG CHOW FRIED ADLAI INGREDIENTS 3 cups leftover cooked ADLAI 1 large shiitake mushroom, rehydrated in water (then diced) 3 tablespoons mushroom stock saved from rehydration ½ teaspoon chicken concentrate ½ teaspoon sugar 1 teaspoon salt 1 teaspoon shaoxing wine 100g shrimp 25g diced chinese sausage/ham 100g chicken breast, diced 1 teaspoon cornstarch + a pinch of salt for chicken ¼ cup green peas 2 large eggs (with a pinch of salt and a splash of sesame oil) SALTED FISH AND CHICKEN FRIED ADLAI INGREDIENTS 3 cups leftover cooked ADLAI 45g shredded & deboned salted fish (adjust amount to preferred saltiness, add more or less) 100g deboned chicken thigh meat 1 teaspoon oyster sayce 1 teaspoon sesame oil ½ tablespoon cornflour Salt and pepper to taste 2 large eggs (with a pinch of salt and splash of sesame oil) 1 tablespoon light soy sauce ½ teaspoon chicken concentrate (I use “Better than Bouillon” brand) 1 bunch of chives, chopped (all white and green) ALL-VEGAN FRIED ADLAI 1 cup broccoli florets, diced ¼ cup carrots, diced 2 tablespoons red onion, diced WHERE TO BUY ADLAI LAZADA/LAZMALL OFFICIAL 🤍 DIRECT 🤍 CHICKEN CONCENTRATE 🤍

Adlai Rice with Shiitake Mushroom Ingredients: 1 cup adlai rice 2 cups water broccoli (bite sizes) carrots (dice) 1 medium onion (chopped) 2 clove garlic (minced) Shiitake mushrooms (sliced) olive oil salt & pepper sesame oil less salt seasoning or any seasoning you prefer 1. Cook adlai rice. 1 part rice, 2 parts water. 2. Prepare the following: sliced mushrooms bite sized broccoli diced carrots chopped onions minced garlic 3. Heat up pan with olive oil then add onions and garlic until tender then add in the mushrooms until they're cooked. 4. Add in the carrots and broccoli. Then add little water to soften the vegetables. 5.Drizzle with sesame oil for aroma if you like. =) 6. Add in the cooked adlai rice. 7. Season with salt and pepper and some seasoning. 8. In the final episode of the Negros Island Ark of Taste series, we talk about Adlai with Natural Farmer Mr Gerry Ledesma of Araal Natural in La Carlota City, Negros Occidental, Philippines. Adlay or Adlai (Coix lacryma-jobi), also known as Job’s tears, is a tall grain-bearing plant of the Poaceae family native to Southeast Asia. In the Philippines, it is usually grown in Davao and Northern Mindanao. Today, it also grows in Negros Occidental as part of the diversification program of the Provincial Government. Adlai can grow over 2 metres in height when planted in fertile soil, but can survive under any type of climate conditions in tropical countries. Its round flowers develop into seeds – which can be violet, yellowish or white – with a hard and shiny shell. Adlai is similar to corn because of its leaves and roots, as well as its growth. Local indigenous communities use it as a substitute to corn and rice flour, which is a key ingredient in the preparation of local sweet delicacies such as biko, suman and kutsinta. It is also a good source of feed for livestock. Adlai can be harvested 5 to 6 months after planting and, aside from its importance in local cuisine, it is also said to help prevent and treat colon, lung, liver and breast cancer. It can also treat allergies and boost the immune system. In addition, adlai is used to prepare food during harvest time for the rituals to thank the communities’ Gods. This ingredient under the ark of taste is facing extinction as agribusiness are encroaching indigenous agricultural lands to make space for mining.
